Ingredients
Olive oil 2 tablespoons
Yellow onion 1 medium onion, diced
Garlic 3 cloves, minced
Baby Spinach
2 handfuls washed and boiled
Red pepper flakes 1/4 teaspoon, optional
Broccoli 1 whole broccoli, cut into florets with peeled stems chopped
White beans 1can, drained and rinsed
Vegetable broth 600mls, plus more as needed
Feta cheese 4 to 5 ounces, crumbled, plus more for serving
Lemon juice 1 to 2 tablespoons, to taste
Salt and black pepper Add to taste
Optional garnish Olive oil, fresh dill, parsley, toasted breadcrumbs, or extra feta
Cook the aromatics
Preheat the oven to 170oC/150oC fan
Place the small broccoli florets, garlic and feta in an oven safe dish. Drizzle with olive oil, add oregano, 1 tsp chilli flakes, salt and pepper.
Roast for 35-40 minutes, checking as cooking times may vary.
Blend everything from the roasting dish, add stock, spinach, lemon zest and juice as well as beans until smooth. Add water if too thick.
Warm the soup in a saucepan, spoon into bowls, garnish with dill, chilli flakes and parmesan dependent on taste.
